The Mairie@Epeigné-les-Bois

The commune of Epeigné-les-Bois held its annual lunch (repas des anciens) for residents over 65. Some 50 attended the lunch hosted by the Conseil Municipale. They were treated to:

Marquisette
A cocktail made up of oranges, lemons, bananas, apples, rum, white and sparkling wine as well as lemonade. See recipe below.

Vichyssoise

Filet de colin sauce homardine

Veau Marengo et sa poêlée

Salade et fromages

Sherry trifle
(the influence of the British council member, Mark Robertson, is evident here.)

Café and liqueurs

The lunch started at 12.30 and people started to emerge from the Salles des Fêtes between 5.30-6pm.


Marquisette
Pour 120 personne(s)

- 5 kg d'oranges
- 2.5 kg de citrons
- 6 bananes
- 4 pommes
- 3 kg de sucre
- 2 l de rhum
- 14 l de vin blanc
- 17 l de limonade
- 7 l de vin mousseux

Laver les fruits, les couper en quartiers, les presser rapidement.
Incorporer le tout au vin blanc.
Ajouter le sucre et le rhum.
Laisser macérer 48h en remuant de temps en temps.
Filtrer et ajouter la limonade et le vin mousseux.
Servir
